1/4 cup (60 ml) mayonnaise
1/4 cup (60 ml) Dijon mustard
Sandwiches
6 panini breads, halved horizontally
12 slices ham
18 slices Swiss cheese
18 small gherkins, thinly sliced lengthwise
1 recipe mojo pork roast, thinly sliced
Preparation
Dijonnaise
In a bowl, combine the mayonnaise and mustard.
Sandwiches
Spread the inside of the breads with dijonnaise. Cover with the ham, cheese, gherkins and pork slices. Close the sandwiches.
In a large ridged skillet or panini grill, grill the sandwiches over medium heat for 3 to 4 minutes per side, pressing down with a spatula. Serve immediately.
