- In a large pot, bring the soup and broth to a boil. Add the pasta and cook until al dente. Add the zucchini, chickpeas, and chicken. Bring to a boil and cook for about 2 minutes. Add broth, if needed.
- With the rack in the highest position, preheat the oven’s broiler.
- Place the bread slices on a baking sheet. Sprinkle with the cheese. Broil. Serve with the soup.
If you reheat this soup the next day, add more broth, as needed.
