You can replace the lemon mayonnaise with store-bought mayonnaise, adding lemon juice to taste.

Snow crab fishing takes place in April and May, as soon as the ice has cleared from the St-Lawrence and boats can pass through. The crab-fishing season is relatively short because it stops as soon as the fisherpeople reach their quotas. Snow crab meat is slightly sweet and has an exquisite flavour. Orange on the outside and white on the inside, it easily breaks into strands.
