- In a bowl, combine the egg yolks, lemon juice, and mustard. Add the oil in a thin stream while whisking vigorously. Season with salt and pepper. Refrigerate, if necessary.
- In a bowl, combine the crab meat, cucumber, green onions, 125 ml (1/2 cup) of the mayonnaise and the Tabasco sauce. Season with salt and pepper.
- In a large skillet, brown the lightly buttered buns.
- Spread mayonnaise inside the buns. Top with the lettuce and crab salad. Serve immediately.
You can replace the lemon mayonnaise with store-bought mayonnaise, adding lemon juice to taste.
