2 cups (500 ml) mesquite wood chips
1 filet salmoned trout, about 1 1/2 lbs (675 g) with the skin
1 teaspoon (5 ml) ground black pepper
1 teaspoon (5 ml) sea salt
Preparation
Soak the wood chips in water for at least 1 hour. Drain.
Place a disposable aluminum plate under the grill’s grate. Place the wood chips in the plate. Preheat the grill, setting the burners on high until the wood begins to smoke, about 15 minutes.
Rub the trout fillet with the pepper and salt. Oil lightly.
Reduce the heat of the grill to medium. Oil the grate. Place the fillet on the grill above the chips, skin side down on the grate. Cover the fish with aluminum foil. Close the lid. Bake for 8 to 10 minutes, depending on the thickness of the fillet.
