Preparation

  1. In a saucepan, brown the meat in the oil. Add the green onions, pepper, garlic, and spices and cook for 2 minutes while stirring. Deglaze with the beer.
  2. Add the remaining ingredients, except for the cilantro and bring to a boil. Simmer, uncovered, for 30 minutes or until the squash is tender. Add the cilantro. Adjust the seasoning.

Note

You will find canned chipotle in adobo sauce in the Mexican food section of most grocery stores. You can freeze the remaining chipotle in a sealable plastic bag.
