Roman-Style Gnocchi

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter a 13 x 9-inch (33 x 23 cm) baking dish.
  2. In a saucepan, slowly heat the milk, water and a pinch of salt. Sprinkle in the semolina, stirring constantly with a wooden spoon. Bring to a boil, reduce the heat to low and cook for 15 minutes, stirring constantly. Add milk, as needed. Remove from the heat.
  3. Add half of the butter (¼ cup/55 g), half the cheese (½ cup/35 g) and the egg yolks. Mix well to combine. Spread the mixture in the baking dish. Sprinkle with remaining cheese and the breadcrumbs. Scatter the remaining butter, diced. Season with salt and pepper.
  4. Bake for 30 minutes. Cool, then cut into squares or circles. The gnocchi can be served plain, hot or cold, or with tomato sauce. They are excellent served with meat dishes like veal parmigiana or veal chops with Parmesan.

Note

Durum wheat semolina is sold in supermarkets and Italian grocery stores. It is used to make fresh pasta.
