- Prepare a wood fire and let it burn to get a bed of coals (see note) or preheat the grill, setting the burners to medium.
- Wrap each potato tightly in two layers of aluminum foil (one layer only if they are baked on the grill).
- Cook the potatoes in the coals or grill for 45 minutes to 1 hour or until soft. Serve with butter, sour cream, and chopped fresh chives.
If you make the Spit-Roasted Pork, place the potatoes in the same coals.
