- In a bowl, combine the ginger, garlic, orange zest, juice and soft drink. Add the chicken, coat and marinate in the refrigerator for 1 hour.
- Preheat the oven to 190 °C (375 °F). Drain the chicken and place in a baking dish. Season with salt and pepper.
- Bake the chicken for about 1 hour. During the last 30 minutes of cooking, baste with the marinade about 4 times. The chicken skin should be crispy. Remove the chicken from the baking dish. Deglaze with a little broth, scraping the bottom, if necessary. Strain the cooking juices through a sieve and serve as a sauce.
