Tomato and Pesto Sandwiches

  1. 1. In a food processor, blend the basil, pine nuts, Parmesan and garlic with the lemon juice. With the machine running, drizzle in the oil until the mixture has a creamy and slightly grainy texture. Season with salt and pepper. Set aside.
  2. Preheat the grill, setting burners to high. Oil grate.


  1. Cut the bread in half horizontally and brush with a little oil on each side.
  2. Grill the inside of the bread, then flip. Spread pesto on the bottom, to taste, and add cheese slices. Continue cooking until the cheese is warm. Top with tomatoes and season with salt and pepper. Cover with the top half of the bread.


These sandwiches can also be prepared in the oven under the broiler or in a panini press. If desired, garnish with slices of bacon and the lettuce of your choice.
