Ingredients
1/2 lb (225 g) skinless salmon fillet, very fresh, cut into small dice
3 slices smoked salmon, diced
1 small red onion, finely chopped
1/2 pomegranate, seeds only
1 green onion, chopped
1 tablespoon (15 ml) capers, finely chopped
1 tablespoon (15 ml) olive oil
1 tablespoon (15 ml) mayonnaise
1 tablespoon (15 ml) Dijon or whole-grain mustard
1 tablespoon (15 ml) crushed plain potato chips (or tempura)
Sea salt, to taste
Sriracha sauce, to taste
Preparation
In a bowl, combine all ingredients. Serve immediately in wonton spoons or roll in California maki (see recipe).
