Preparation

  1. With the rack in the lowest position, preheat the oven to 350°F (180°C). Generously butter a 12-cup muffin tin.
  2. In a bowl, combine the flours, baking powder, salt and pepper.
  3. In another bowl, combine the remaining ingredients. Stir into the dry ingredients until the flours are just moistened. Divide the batter among the muffin cups.
  4. Bake for 30 minutes or until a toothpick inserted in the centre of a muffin comes out clean. Serve warm.
