- With the tip of a knife, scrape the seeds from the vanilla pod.
- In a bowl, combine the cane syrup with the vanilla seeds and pod. Set the vanilla syrup aside.
- On a work surface, cut off and discard the ends of the clementines, oranges and grapefruits. Cut each clementines in 3 thick slices. Cut the oranges and grapefruits in half, then quarter.
- In a large serving platter, place the citrus randomly. Squeeze and drizzle with the lemon and lime wedges and add them on the plate. Drizzle with the vanilla syrup.
You can replace the cane syrup with 2 tbsp (30 ml) of sugar. Same as for the syrup, combine with the vanilla seeds and pod. Just sprinkle over the citrus and allow it to macerate for 10 minutes or until the sugar has dissolved.
