Curried Pork Chops with Roasted Squash

Ingredients

  • 2 tbsp (30 ml) olive oil
  • 1 bunch rapini, about 1 lb (454 g), trimmed and blanched (see note)

  • 8 RICARDO Curry and Ginger Pork Chops, about 1/2-inch (1 cm) thick, with the bone (see note)
  • 2 tbsp (30 ml) butter
  • 1 shallot, thinly sliced
  • 2 tsp (10 ml) mild curry powder
  • 1 cup (250 ml) beef or chicken broth
  • 1/3 cup (75 ml) maple syrup
  • 1 tbsp (15 ml) whole-grain mustard
  • Salt and pepper
