Mini Pizzas

Preparation

  1. With the rack in the middle position, preheat the oven to 350°F (180°C).
  2. On a baking sheet, place the English muffin halves cut-side up. Cover with the tomato sauce. Top with a slice of turkey, a half slice of mozzarella, a slice of salami and another half slice of mozzarella. Repeat in order to have two layers of toppings on each muffin half.
  3. Bake for 10 minutes or until the cheese has melted. To brown the cheese, continue to cook the pizzas on broil for 2 to 3 minutes. Let cool for 5 minutes before serving.
  4. When ready to serve, garnish the mini pizzas with the cherry tomatoes and basil leaves.
