- Into a large bowl, empty the can of tomatoes. With your hands, break the tomatoes into small chunks.
- In a large pot, brown the onion in the oil. Add the tomatoes and their liquid and continue cooking for 2 minutes. Add the chicken broth and bring to a boil.
- Add the noodles and continue boiling for about 10 minutes or until the noodles are tender. Stir the soup from time to time while it’s cooking so the noodles don’t stick to the bottom of the pot. Season with salt and pepper. Let the soup stand for 5 minutes. Serve it with your favourite crackers.
