Get ready to blow your stack: Belgian tradition dictates using pearl sugar—it melts on the surface, creating a caramelized crust that has a satisfying crunch on the outside and a chewy tender inside.   1. In a bowl, combine the milk and the butter.
  2. In another bowl, combine the flour, sugar, yeast and salt. Add the egg and whisk until the mixture is lumpy. Gradually add the milk mixture while whisking (a few clumps of flour will remain). Cover and let rest for 12 hours in the refrigerator.
  3. Preheat the waffle iron. Sprinkle 1/2 tsp of the pearl sugar into each cavity. Cover with about 1/3 cup (75 ml) of the batter. Sprinkle 1/2 tsp of pearl sugar over the batter and close the waffle iron. Cook for 4 to 5 minutes or until the waffle is golden. Keep warm. Repeat with the remaining batter and pearl sugar.


Traditional Belgian waffles are made with pearl sugar, which can be found in specialty baking stores. If unavailable, crush sugar cubes with a mortar and pestle to make peppercorn-size sugar crystals.
