Channel the Caribbean with this spicy number. Since you precook the drumsticks at home, all they need for the grand finale is a quick flash on the grill for caramelized deliciousness you can eat with your hands.






  1. In a food processor, purée all of the ingredients until smooth. Set aside.


  1. In a large pot over medium heat, bring the chicken and broth to a boil. Cover and simmer for 20 minutes or until the chicken is cooked through. Keep the broth for another use.
  2. In a large glass dish or sealable plastic bag, combine the cooked chicken with the marinade. Cover the dish or seal the bag. Refrigerate for 2 to 12 hours. Drain the chicken and reserve the marinade.
  3. Preheat the grill, setting the burners to high. Oil the grate.
  4. Grill the drumsticks for 10 minutes on each side, brushing with the marinade, until the meat is heated through and caramelized.
  5. Serve the chicken with green mango salad (see recipe).
