- In a large non-stick skillet over high heat, brown the bell peppers, onion, garlic and sausage pieces in the oil for 10 minutes or until the vegetables are tender. Add the broth and broccoli. Cover and cook over medium heat for 5 minutes or until the sausage is cooked through and the broccoli is al dente.
- Meanwhile, in a pot over medium-high heat, bring the broth to a boil. Sprinkle in the polenta while whisking. Simmer for 2 to 3 minutes, stirring constantly.
- Off the heat, stir in the cheese until it is completely melted. Season with salt and pepper. If the polenta is too thick, add more broth. Serve immediately with the sausage stew.
