Quick Gravy

This finger-licking gravy has a couple of shortcuts: Using canned, concentrated broth (a.k.a. consommé) means less time boiling it down for a smooth consistency. And adding pre-toasted flour (found with the other types of flour at the grocery store) means it will dissolve easily and thicken your gravy without getting lumpy.

  1. In a pot over medium heat, cook the onion and garlic in the butter until golden, stirring often, about 10 minutes.
  2. Add both broths and bring to a boil. Whisk in the toasted flour and let simmer for 3 to 5 minutes or until the gravy thickens. Season with salt and pepper. Strain through a sieve.
  3. Serve with spiced roast chicken (see recipe), turkey, red meat or poutine!
