Pressure Cooker Lemon Chicken Tajine

Make this inspired lemon chicken tajine in your RICARDO electric pressure cooker or Instant Pot.



  1. Preheat the pressure cooker on the Sauté function for 2 minutes. Brown half of the chicken at a time in the oil. Season with salt and pepper. Set aside on a plate.
  2. Brown the onion, adding oil, if necessary. Add the garlic and spices. Cook for 1 minute while stirring. Add the chicken, vegetables, broth, raisins and lemon peel. Mix well to combine. Cover and select the Poultry function. Set the machine to cook for 15 minutes.
  3. Let the pressure release naturally (about 15 minutes), and remove the lid. Add the cilantro and adjust the seasoning.
  4. Using a ladle, transfer 1 ½ cups (375 ml) of the cooking liquid into a small pot. Bring to a boil. Remove from the heat and add the couscous. Cover and let rest for 5 minutes. Fluff the grains of couscous with a fork. Season with salt and pepper. Serve the couscous with the chicken tajine.
