In a small pot over high heat, warm the water and sugar, stirring, until the sugar is completely dissolved. Remove from the heat and add the lemon juice and strawberry purée. Pour into the Popsicle moulds and place a Popsicle stick in the centre of each Popsicle.
Freeze for 6 hours or until the Popsicles are firm. Before unmoulding, run the base of the moulds under warm water.
Note from Ricardo
To avoid spilling, use a measuring cup with a spout to fill the moulds. You can buy strawberry purée in the frozen foods section of the grocery store. Or make your own by puréeing 1 cup of strawberries and passing it through a sieve to strain out the seeds.
