“This fun, elegant, pour-and-serve cocktail is made for entertaining. And after the party’s over, enjoy the leftover pear liqueur another day with lots of fresh lemon over ice as a light, refreshing aperitif or digestif." — Étienne Marquis, chef

Ingredients

Preparation

  1. Place a champagne flute in the freezer for 1 hour.
  2. In the flute, combine the pear liqueur and the lemon juice. Top off the glass with the cold sparkling cider
  3. Thread a cube of pear-flavoured pâte de fruit on a cocktail pick and set on the rim of the glass, if desired.

Note

Pâte de fruit is a French fruit jelly confection.
