- In a bowl, combine all of the ingredients. Season with salt and pepper. Let marinate for 10 minutes. Drain.
- In a glass dish, combine the oil, sumac and harissa. Add the chicken and coat well with the marinade. Let marinate for 5 minutes. Season with salt and pepper.
- Meanwhile, preheat the grill, setting the burners to high. Oil the grate.
- Grill the chicken for 4 minutes per side or until cooked through. Serve the chicken with the hummus and cucumbers, and rice or couscous, if desired.
