Artichoke and Mandarin Canapés

  1. With a knife, finely chop the artichokes and place in a bowl. Add the parsley, sunflower seeds, Parmesan and oil. Season with salt and pepper. Mix well.
  2. When ready to serve, rub the toasted bread with the garlic, if desired. Spread the artichoke mixture over the bread. Top with the mandarin pieces. Drizzle with olive oil, if desired.
