Preparation
- In the pressure cooker, combine the water, oats and salt.
- Cover and select the Programmable function on LO (low pressurization). Set the machine to cook for 12 minutes for an al dente texture.
- Let the pressure release manually to avoid overcooking the oatmeal. Remove the lid and mix well. Let rest for 5 minutes.
- Garnish with maple sugar, dried or fresh fruit, or nuts, if desired.
Note
Steel-cut oats are also called Irish or Scottish oatmeal. They are made using the whole oat that is then cut into small pieces using a steel blade. You can replace steel cut oats with large flake oats. In this case, you will have to reduce the water to 2 cups (500 ml) and also the cooking time to 2 minutes.
