On a surface dusted with gluten flour, knead the dough for 3 minutes. If the dough is too sticky, add more gluten flour as needed. Shape into a loaf. Cover in plastic wrap, leaving a ½-inch (1.5 cm) space at each end to allow the loaf some space to expand. Twist the ends of the plastic wrap, as you would a candy wrapper, and tie in a knot to seal.
