Ingredients: 2 onions, unpeeled; 1 tbsp (15 ml) vegetable oil; 4 carrots, unpeeled, washed and chopped into chunks; 2 celery stalks with leaves or the stems and fronds of 1 fennel bulb, chopped; 1 leek, green part only (or 3 green onions), coarsely chopped; ½ tomato or a few cherry tomatoes (optional); A few parsley stems; 12 cups (3 litres) water; 10 whole peppercorns; 1 thyme or rosemary sprig; 1 bay leaf; 1 whole clove

Preparation

- Remove the first layer of the onion skins. Halve the onions.
- In a large pot over medium-high heat, brown the cut sides of the onions in the oil until caramelized. Add the remaining ingredients.
- Bring to a boil and simmer for 45 minutes or until the vegetables are tender. Strain the broth and compost the vegetables. Let cool before refrigerating or freezing.
