Caramelized Rice Cereal
- In a small non-stick skillet bring the maple syrup to a boil. Add the crispy rice cereal. Cook over medium-high heat, stirring continuously with a wooden spoon, until the cereal is coated in maple syrup and golden, about 4 minutes. Transfer to a plate and let cool. Mix in the flaked coconut and set aside.
- Divide the mango among 4 glasses. Add the maple syrup, if desired. Top with the coconut yogurt and garnish with caramelized rice cereal and lime zest.
