Spicy Tomato Sauce (Salsa Roja)
- In a blender, purée all of the ingredients until smooth.
- In a small pot, bring the tomato mixture to a boil. Simmer for 5 minutes or until the sauce starts to thicken slightly. Season with salt and pepper. Let cool.
- In a bowl, combine all of the ingredients. Season with salt and pepper. Let marinate for at least 15 minutes.
- The two toppings will keep for 1 week in an airtight container in the refrigerator. Let sit out at room temperature for 15 minutes before serving.
