1 dried yellow Peruvian chili pepper (
aji amarillo
) or 1 tbsp sweet paprika
½ tsp cumin seeds
½ tsp black peppercorns
Preparation
In a mortar and pestle, personal blender or coffee grinder, crush the spices.
The spice mix will keep for 2 years in an airtight container at room temperature.
