2 tbsp sweet paprika
1 tsp black peppercorns
1 tsp ground cinnamon
½ tsp cumin seeds
½ tsp ground nutmeg
½ tsp dried oregano
¼ tsp dried thyme
¼ tsp ground ginger
5 allspice berries
3 cloves
2 bay leaves
1 tsp each grated lemon and orange zest
Piri-piri or cayenne pepper to taste
Preparation
In a mortar and pestle, personal blender or coffee grinder, crush the spices.
The spice mix will keep for 2 years in an airtight container at room temperature.
