White Bean and Sausage Stew

  1. In a large pot over medium-high heat, cook the onion, garlic and sausages in the oil for 5 minutes. Add the tomato paste and cook for another 30 seconds while stirring. Add the remaining ingredients except for the bread. Season with salt and pepper.
  2. Bring to a boil. Simmer for 15 minutes or until the sausages are cooked through, stirring occasionally. Drizzle with olive oil and serve with slices of toasted bread, if desired.
