  1. In a bowl, combine all of the ingredients. Let marinate for 10 minutes. Drain.

  1. Meanwhile, in a large non-stick skillet over medium-high heat, cook the beef and onion in the oil, breaking the meat up with a wooden spoon, until golden. Add the spices and cook for 1 minute while stirring. Keep warm.
  2. In a pot of boiling water, cook the udon until tender, about 3 to 4 minutes. Drain.
  3. Add the noodles, tamari and maple syrup to the skillet. Toss to coat the noodles in the sauce.
  4. Serve the noodles in bowls. Garnish with the pickled vegetables and sprinkle with the sesame seeds.
