Ingredients: 1 large yellow onion, cut into 12 wedges; 2 tbsp (30 ml) olive oil; 1 cup (25 g) arugula; 2 tbsp roasted pumpkin seeds; 2 tbsp (30 ml) olive oil; 2 tsp (10 ml) lemon juice; 1 tsp garlic, chopped; 1 lb (450 g) lean ground lamb; ⅓ cup (30 g) panko breadcrumbs; 1 tbsp ground sumac; 1 egg; 2 tbsp (30 ml) olive oil; 4 hamburger buns, toasted; ½ cup (125 ml) sour cream; ½ cup (15 g) arugula

Preparation

Roasted Onion
- With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On the baking sheet, toss the onion wedges with the oil. Season with salt and pepper. Bake for 30 minutes or until the onion is tender and golden.
Arugula Pesto
- Meanwhile, in a small food processor, purée all of the ingredients until fairly smooth. Season with salt and pepper. Set aside.
Patties
- In a bowl, combine the ground lamb, breadcrumbs, sumac and egg. Season with salt and pepper. Using your hands, form the mixture into 4 patties.
- In a large skillet over medium heat, cook the patties in the oil for 4 to 5 minutes on each side.
Burgers
- Cover the bun bottoms with the sour cream. Top with the patties, roast onions, arugula and pesto. Close with the bun tops.
