Grilled Merguez with Herbed Tomatoes

Dressing
1 lemon, zest finely grated
2 tbsp (30 ml) lemon juice
3 tbsp roasted pumpkin seeds, chopped
3 tbsp fresh Parmesan cheese, grated
3 tbsp (45 ml) olive oil
3 tbsp parsley, finely chopped
2 tbsp mint leaves, finely chopped
1 tbsp capers, drained and coarsely chopped
Sausages and Vegetables
1 ½ lb (675 g) merguez sausages (about 12 to 14 sausages)
3 Lebanese cucumbers, cut into long slices
2 large tomatoes, various colours, sliced
1 yellow bell pepper, seeded and thinly sliced
Parmesan cheese shavings, to taste
Preparation
Dressing
In a bowl, whisk together all of the ingredients. Set aside.
Sausages and Vegetables
Preheat the grill or a grill pan, setting the burners to medium-high. Oil the grill or the pan.
Grill the sausages for 3 minutes on each side or until cooked through. Set aside on a plate.
Divide the sausages and vegetables among four plates. Drizzle with the dressing. Garnish with Parmesan shavings.
