The tortelloni keep better when dusted with semolina rather than with regular flour. Also the semolina will not turn the pasta cooking water into a gluey liquid.

Once the tortelloni are frozen, transfer them to an airtight container. They will keep in the freezer for 3 months.

Although similar to tortellini, when larger in size, this type of pasta is referred to as tortelloni.
