Candied Amarena or maraschino cherries are a specialty product made from black Italian cherries bottled in a thick syrup. These cherries should not be confused with ordinary supermarket maraschino cherries. This specialty product can be found in fine food shops or in boutiques specializing in cocktails.

You can prepare the ricotta cream a few hours in advance and set it aside in the refrigerator. The doughnuts can also be filled with pastry cream or a pistachio-flavoured cream but ricotta is a quick and delicious option.
