Note from Ricardo

The tortellini keep better when dusted with semolina rather than with regular flour. Also the semolina will not turn the broth or pasta cooking water into a gluey liquid.

Once the tortellini are frozen, transfer them to an airtight container. They will keep in the freezer for 3 months.

You should obtain about 300 tortellini. For this soup, we recommend using only half.
