The chicken can also be cooked in the oven: In a skillet over medium-high heat, brown the chicken in the oil for 3 minutes on each side. Place on a non-stick or parchment paper-lined baking sheet and bake in an oven preheated to 350°F (180°C) for 15 to 20 minutes or until a thermometer inserted in the chicken reads 165°F (74°C).
