If you your eggs are coming directly from the refrigerator and you are short on time, you can place them in a bowl of hot water for 5 minutes. Having the eggs at room temperature will make it easier to incorporate air and they will increase in volume more quickly.

The salt does not affect the success of this recipe, but it does help to tone down the bitterness of the chocolate while also bringing out its flavour.
