Make sure that all of the fish bones have been removed.

The quick dry rub applied to the Arctic char not only helps to season the fish but also to give it a texture that is easier to slice.

Cranberry vinegar is available in some grocery stores or fine food shops. If you have some on hand, use 3 tbsp (45 ml) for the dressing and omit step 4 of the recipe.
