Crème fraiche can sometimes be difficult to find. If not available, mix 1 cup (250 ml) 35% cream and ¾ cup (55 g) freshly grated Parmesan cheese in a microwave-safe bowl. Heat in the microwave oven for 30 seconds at a time or just until the cheese has melted. Mix well. Let cool completely before using.
