Following the indulgences of the holidays, it’s time to get back to salads. But not just simple lettuce leaves drizzled with dressing! We’ve developed deliciously satisfying salads with personality. Each recipe boasts a unique character trait that can be adapted to your choice of salads for a balanced meal that’s never boring.

1. Beet Salad with Savoury Crumble

This refined-looking salad is actually super easy to assemble because it uses store-bought salmon gravlax. You can make your life even easier by purchasing cooked beets at the grocery store. Simply lay everything elegantly on the plate, pour the mustard dressing over it, and sprinkle a garnish of crunchy seeds on top for a pretty and tasty weekday dinner.

2. Sweet Potato and Broccoli Salad

No one will still be hungry in the middle of the evening after eating this salad. The first layer boasts sweet potatoes dressed with spicy mayo, a flavour bomb of quick-pickled veggies in Vietnamese dipping sauce, and the second layer is cooked chicken. Top with cilantro leaves and crunchy peanuts.

3. Soba Noodle Salad with Air Fryer Flap Steak

Set aside your usual mayo-laced macaroni salad in favour of this soba noodle salad. It also includes a good quantity of kale and Savoy cabbage as well as zucchini and cucumber, mixed with hot sauce and maple syrup. A few slices of grilled flank steak and Asian pear bring this super-satisfying dish together.

4. Green Vegetable Salad with Fried Shallots

Winter may be devoid of greenery, but it’s no excuse to not load your plate with it. In this case, green beans, asparagus and watercress are put to good use, but any green vegetable in your fridge will do. Just lay them on a bed of dried tarragon yogurt dressing that’s surprisingly fresh. Simply blanch the veggies to retain their crunchiness and sprinkle with toasted almonds.

5. Barley, Roasted Pepper and Feta Salad

During the week, you always need convenient lunches you can just grab before leaving for work or school. This barley salad stays fresh for several days in the fridge and will be your ultimate ally this winter. Roast bell peppers and shallots in the oven (they’ll give a sweet taste to the dish), and then add a good bunch of chopped arugula, which is used more as an aromatic than a lettuce.

6. Carrots Two Ways and Chickpea Salad

Carrots, chickpeas, lettuce and bagel slices make an oddly mismatched salad, but one that is totally enjoyable. Carrots are included, both raw and marinated, as well as cooked with garlic and honey, making for a warm salad. It’s punctuated with pieces of crispy bagel, creamy garlic and curried chickpeas.

7. Warm Cauliflower and Crispy Quinoa Salad

To make this recipe, we were inspired by the baked salad trend. In other words, salads where most of the ingredients are cooked in the oven. This way, the vegetables caramelize, accentuating their flavours; in this salad, cauliflower is roasted in the oven with bacon before getting mixed with crunchy quinoa and currants. An exciting salad? Yep, it’s possible!
