5 Recipes to Cook with Apples Differently

This fall, chef Isabelle Deschamps Plante wanted to cook with her fall apple haul in a new way. Without offending pies and crumbles, she looked to renew her repertoire with this fruit worthy of being highlighted in a wide variety of recipes, whether it’s a delicious weeknight dish or something fancier for entertaining.

1. Thai-Style Apple and Grilled Beef Salad

You’ll find flavours from both Thailand and Quebec in this papaya salad-inspired recipe. The dressing contains fish sauce, lots of lime juice and bird’s eye chili, to taste. The salad combines shredded iceberg lettuce, beef hanger steak and crispy Honeycrisp apples. It’s like a quick trip to Asia without the jet lag!

2. Chicken Wings with Apple Cider Barbecue Sauce

These homemade chicken wings are completely addictive. You’ll find apples in the barbecue sauce that coats the meat, which also contains cider and apple jelly, as well as in the dipping sauce, made with roasted apples and apple jelly. It’s a dish that’ll leave you with messy fingers, but we don’t think you’ll complain about that.

3. Salmon and Apple Almondine

Perhaps unexpectedly, apples and salmon make a delicious pair in this recipe that evokes classic sole almondine. Place the whole cooked fillet on a large serving dish and sprinkle with brown butter, lemon and almonds. Then garnish with onions and tender apples, made pink by the acidity of the lemon juice. This meal is sure to wow everyone at the table.

4. Apple and Caramel Cookies

Reminiscent of apple turnovers, these cookies boast a delicious apple and cinnamon filling. Form a divot in each cookie, place some apple filling in it, and then drizzle caramel on top. It’s a highly satisfying snack!

5. Chai Tea and Apple Cake

Apples are the stars of this cake. Not only are they used as a caramelized topping, but they’re also in the dough itself, which is seasoned with chai tea. Yogurt is also incorporated into the dough for a light, moist crumb. With its cream cheese frosting, it’s like a big serving of autumnal happiness.

Apples to discover

Each apple has its own personality, being more or less crunchy, sweet or tart, and is suitable for different types of recipes. Here are a few lesser-known apples to cook and bake with more often.

 

1. Ariane: Given that this firm apple doesn’t oxidize, you can eat it fresh as a snack, in a salad or as a garnish. It’s tart, sweet and very crisp. When baked, it retains its shape.

2. Ambrosia: Fragrant, sweet and slightly tart, it’s recognizable by its pink and yellow skin. Enjoy it in desserts, where it retains its shape once baked, or raw in salads.

3. SweeTango: This apple is crunchy, juicy and doesn’t brown. This high-calibre apple has a taste reminiscent of lemon and honey. It’s best enjoyed in desserts or applesauce.

4. Gala: Its yellow flesh is juicy, very firm and crisp. Its skin is colourfully striped and resistant to bruises, making it a great apple to either cook with or simply bite into.
