3 Ways to Use Risotto Leftovers

Ah, risotto… This Italian dish can be made in numerous ways: with mushrooms, peas, shrimp, etc. Easy to cook, it also makes for great leftovers. Maximize your ingredients with three different ways to enjoy your risotto.

1. Make a stuffing

Got a cup of perfectly cooked risotto left over? Just mix it with cooked chicken or canned tuna, peas and cheese, and then stuff the mixture into colourful bell peppers. It’s quick to make and very satisfying.

2. Make hors d’oeuvres

For a quick hors d’oeuvre, try this recipe. If you love arancini, we suggest doubling your risotto recipe! With this 2-in-1 method, you end up saving a step. Just roll the leftover risotto into balls, coat them in flour, egg and breadcrumbs, and then fry until golden. Serve with a tomato-based sauce for a delicious treat!

3. Make a soup
