How to Use Wilted Celery

Has your celery gone limp in the fridge? Not a problem! Before tossing it into the compost bin, you can give it a second life in many dishes. Here are a few ways to cook with wilted celery.

1. Make a mirepoix

Dice your celery to make a mirepoix, along with carrots and onions. This trio of veggies will bring flavour to a myriad of recipes, such as braises, soups or sauces.

2. Use as a flavour enhancer

With its crunchy texture and slightly bitter taste, it can elevate salads and fillings for sandwiches.

3. Use as a topping

Finely chop the celery’s leaves and use them in place of herbs in a fish dish, soup or a salad.

4. Sauté it

Celery, added in pieces or sticks, will bring extra crunch to sautés. The celery will become the star of the show, even if it is a bit on the wilted side.

5. Make a cocktail

Celery is often used as a garnish in a cocktail (like in a Caesar, for example), but you can also whip up a rather refreshing daiquiri! Start by making a celery granita, then add it to a blender with lime, rum and sugar, and blend until smooth.
