January 15 to 19, 2024: What to Cook This Week

To tame the cold and snow of mid-January, there’s nothing better than meals filled with good vegetables that are both tasty and comforting. Italian-style chicken, ratatouille and risotto promise to whet your appetite!

Monday: Udon Noodles with Tofu and Green Beans

Tofu, beans and udon noodles come together in this recipe that’s ready in just 30 minutes. Coat the ingredients with a sweet sauce that combines ketchup, soy sauce and peanut butter, bringing great flavour to the dish. A healthy choice, this vegetarian meal is a perfect option for meatless Monday.

Tuesday: Tuscan-Style Chicken

Inspired by Italian cooking, this dish is bound to appeal to the whole family. Cook chicken with olives and rosemary in a blend of wine and broth. Simmer to reduce the liquid several times by adding liquid gradually. Serve the chicken thighs coated in the sauce along with buttered noodles or mashed potatoes.

Wednesday: Quick Ratatouille with Hash Browns

Ratatouille is ideal to fill up on vegetables. This quick version is perfect for a fast and easy weeknight meal. Eggplant, zucchini, bell peppers, cherry tomatoes; cook everything in the same skillet. Serve the dish with hash browns to add some crunchiness. An original recipe that works great for brunch or dinner.

Thursday: Cod and Corn in Spicy Curry Broth

Frozen cod or haddock (depending on what you have available in the freezer) is your fish of choice this week. Poach it in broth enhanced with coconut milk, curry powder and harissa. Reminiscent of a stew, the preparation also includes zucchini and corn kernels. Serve the dish in shallow bowls and add the final touch with fresh cilantro and chili pepper for a spicy note.

Friday: Risotto with Pork Meatballs and Sugar Snap Peas

With the start of the weekend, a comforting, nicely creamy risotto served with pork meatballs can turn into a special moment at the table. Mix the meat with panko breadcrumbs for a light and fluffy texture. Add sugar snap peas to the rice at the end of the cooking time and give some bite to the dish by garnishing it with spicy kale chips with Parmesan.
