April 14 to 18, 2025: Budget-friendly recipes to cook this week

This week, there’s plenty of delicious dinners on the menu: slow cooker braised pork, lemon pork chops, tortilla pizza and more. Easy and quick to prepare, these recipes also have the advantage of being economical.

Monday: Fried Tofu, Eggplant and Green Beans

The week starts with a vegetarian stir-fry with eggplant, tofu and green beans for different tastes and textures. Add a mixture of soy paste, seasoning sauce, oyster sauce and bird’s eye chili for a powerful dish. By frying the eggplant, unlock its delectably sweet side!

Tuesday: Slow Cooker Braised Pork and King Oyster Mushrooms

Put the slow cooker to work for a quick dinner that does all the work for you—and during your workday! And to make it even easier, cook the pork shoulder in our beef and onion fondue broth, along with maple syrup, ginger and sambal oelek. So simple, but so tasty!

Wednesday: Piccata Pork Chops

These lemony pork chops come together quickly and are sure to be a hit with the whole family. Pork is served with a butter sauce amped up with punchy capers and fresh parsley. Complete each plate with greens for a beautiful meal, which—bonus—can be prepared in less than 30 minutes.

Thursday: Beet Salad with Savoury Crumble

To impress effortlessly, opt for this salad, which may look refined but is ultra easy to prepare since we use store-bought salmon gravlax. You can even simplify your task by buying already cooked beets at the grocery store, too. Serve the salad with a mustard vinaigrette and sprinkle with a crunchy seed garnish for the ideal textured topper.

Friday: Tortilla Pizzas with Mushrooms and Kale

It’s the end of the week and everyone is down for a good pizza, but not so much on preparing the dough. That’s why using tortillas as a base for mushrooms, kale and mozzarella is the perfect recipe hack. This one is made for two servings, but you can easily double it for the whole family.
