Preparation

  1. In a bowl, combine the tuna, mayonnaise and green onion. Season with pepper.
  2. Spread mayonnaise on one side of each slice of bread.
  3. On a slice of whole-wheat bread, spread some of the tuna mixture and garnish with olives. Cover with a slice of white bread. Layer the lettuce, tomato and egg. Finish with a slice of whole-wheat bread.
  4. Cut the sandwiches diagonally into triangles and secure with toothpicks.

Note

Perfectly hard-boiling eggs are not very complicated, but don’t overcook the egg to avoid the greenish ring around the yolk. The first way is to place them in boiling water. Once the boil has resumed cook for 10 minutes. Another method is to place them in cold water and bring to boil. You must then count 7 to 9 minutes of cooking. Whatever the method, you must place the cooked eggs immediately in cold water. For easy shelling, peel under cold running water.
For dessert, accompany the Nicoise Club Sandwiches with Pineapple "Fries". Cut a fresh pineapple into sticks. Serve with two classic fry accompaniments: vanilla yogurt instead of mayonnaise and strawberry sauce instead of ketchup. Very cool!
